Ang Sikreto Sa Sinigang Na Ulo ng Tanigue

"A close-up view of Sinigang Na Ulo ng Tanigue, a traditional Filipino sour soup. The dish features chunks of tanigue (mackerel) head, fresh vegetables like water spinach, radish, and string beans, all simmered in a light, tangy broth served in a white bowl.

Ingredients:

  • Ulo ng Tanigue (Fresh)
  • 2 pcs tomato
  • 1 pc onion
  • 3 cloves garlic
  • 1 pc chili green
  • 1 small thumb ginger
  • Talbos ng Kamote
  • 1 pc radish
  • 3 pcs okra
  • 2 pcs eggplant
  • 1/8 cup fish sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp seasoning granules
  • 2 tbsp tamarind powder
  • Oil for sauté
  • 1 liter of Water

Procedures:

  1. Prepare all the ingredients, wash and cut.
  2. Heat the pan with oil and sauté the garlic, onion and tomato.
  3. Season with salt, pepper, sugar and seasoning granules. Stir it well.
  4. Add the water and fish sauce, bring to boil.
  5. When boiling add the fish head and cover it.
  6. After a minute add the okra, eggplant and radish. Cover it again
  7. Lastly add the tamarin powder, Sweet Potato Leaves and chili green. Stir and cover for 1 more minute.
  8. Serve while hot and extra fish sauce and calamansi on the side. Enjoy
