Ingredients
- 385g condensed milk
- 1 tbsp calamansi juice
- 1 tsp vanilla extract
- 8 pcs egg yolks
- 2 pcs egg whites
- FOR THE PUTO
- 2 cups all-purpose flour
- 4 pcs egg whites
- 3 tbsp baking powder
- 400g evaporated milk
- 3 tbsp melted butter
- 1 cup sugar
- pinch of salt
- food color (optional)
Instructions
- In a mixing bowl, beat the egg yolks and egg whites.
- Add the condensed milk, vanilla extract, and calamansi juice.
- Whisk until all ingredients are well-blended.
- Set aside.
- FOR THE PUTO
- In another mixing bowl, put the all-purpose flour, baking powder, and sugar. Use a strainer to break up clumps. Mix until well-blended.
- Add the egg whites and evaporated milk then mix until well-blended.
- Add the melted butter, pinch of salt and the optional food color then mix until well-blended.
- Set aside.
- COMBINING THE FLAN AND PUTO MIXTURES
- Brush some melted butter in each of your puto cup molders.
- When the steamer is ready, put-in the cup molders.
- Put the flan mixture in each cup molder. Only fill the bottom portion of the molders.
- Steam them for about 5 minutes.
- Transfer the cup molders to a plate or tray with water to let them cool down.
- This time, fill each cup with the puto mixture.
- Steam them again for about 8 to 10 minutes.
- Transfer them again to a plate or tray with water to let them cool down.
- Remove each cooked puto flan from the cup molders.
- Serve and enjoy your puto flan!
